
Last year with the Pixel 5 and 4a 5G, Google introduced Auto Night Sight which automatic turned on Night Sight during low-light conditions. Although some some people found it helpful, some people found the automatic nature frustrating as it takes a while to capture a picture when Night Sight is turned on. But now it seems like Google has realized the issue and addressed it.
According to 9to5Google, the recent Google Camera Version 8.1.200 rolling out this Monday, will allow the users to turn off Auto Night Sight.
Previously the toggle to turn this feature off would annoyingly reset whenever the app closed. As of this latest update, Auto Night Sight now remains disabled when you close the app.
Moreover the Pixel 5 is known for being aggressive about using Night Sight even in conditions where there is enough lighting for a normal shot. So thanks to the update the new camera app will remember if you disable Auto Night Sight through app closures, swipe aways in Recents/multitasking, and even force stops.

The feature isn't widely available as of now. It should be noted that the users can no longer able to manually sideload Google Camera (or the Recorder app) without first resetting the entire device due to some new restrictions.
